#EATFIT with Jess


Looking for an easy and delicious no-guilt snack? This sweet and simple Chocolate Peanut Butter Slice by Jess at Eating For Fuel will satisfy all your cravings. This recipe is refined sugar free, gluten free and dairy free. It can also be kept in the freezer, ready for those times when you are needing a quick fix!

Base:

  • 1/2 cup plain GF flour
  • 1 cup coconut flour
  • 2 large eggs
  • 1 tsp baking powder
  • 1/3 cup coconut oil, melted


PB filling:

  • 3/4 cup peanut butter (any type will work)
  • 1/2 cup sugar free maple syrup
  • 1/4 cup coconut oil, melted
  • 1/2 cup shredded coconut


Toppings:

  • 150g sugar free vegan chocolate
  • Optional: Peanut butter protein cookie crumbs


Peanut Butter Slice

Method:

  1. Preheat oven to 180 degrees and line a slice tray with baking paper
  2. In a mixing bowl, pop all base ingredients in and mix around until combined. Press into the slice tray and bake for 10-15 mins or until lightly golden
  3. For the filling, whisk together the peanut butter, maple syrup, and coconut oil until smooth. Stir in the shredded coconut, then pour over the cooled slice base
  4. Pop slice in the freezer for about 30 mins
  5. Melt your chocolate and pour over the slice. Add your cookie crumbs (if using) and pop back in the freezer for at least two hours (I left mine in the freezer overnight). Enjoy chilled!

Note: For a firmer slice, keep it in the freezer. For a gooier/softer slice, keep it in the fridge.
