Heading back to school isn’t just about the kids, as a parent you might have to rush out of the house too. Often it can be such a scramble that your kids walk out of the house with a packed lunch box and you’ve forgotten about yourself. So… This one is for you too, and not just for the kids!

 

Bite Size Fun!

It’s that time of year where delicious fruit is everywhere and it’s perfect for a snack, but packing Watermelon and other bigger fruits into a lunch box is near impossible unless you’re a pro with a knife.

Well, it’s time to introduce a little fun to your fruit with a melon baller! If you aren’t sure what it looks like, it’s a small ice cream scoop-like object that allows you get is a perfect sphere of deliciousness. Best thing yet it’s safe for the kids to use so they can help out too. For around $5 you can ditch the mess of cutting up melons and create a fun, packable and bite size fruit snack for you and the family.

Quick tip for those hot days… Freeze them!

 

Roll up! Roll up!

No, not the sugar packed ones… We’re talking about fresh Vietnamese rice paper rolls!

It doesn’t matter with it is a quick snack on the go or a meal at lunch time these little guys are healthy and easy to make in bulk when you’re thinking ahead for the week. There are plenty of recipes out there, but the main ingredients are usually variations on rice paper wrappers, vermicelli noodles, lettuce, carrot, cucumber, mint and coriander. Don’t be afraid to jazz it up with some sauce too, chances are you have most of the ingredients in the fridge or cupboard already.

 

Just in Quesadilla!

This one might sound like a bit of effort but it is super simple, just think of it like a portable pizza. Grab yourself some flour tortillas and essentially any filling you like, from ham and pineapple, to vegetarian, to a pepperoni… That’s the great thing about them!

So how do you make them? Heat a frying pan, chuck in a tortilla, put your topping on, add some cheese, put the other tortilla on top, flip it, and you’re done. You can cut it up for lunch that day, or you can chuck them in the fridge or freezer for later if you want a little bit more prep time. Quick, delicious, and who doesn’t love pizza toppings!?

 

Muffins? Muffins!

We know your mind is probably drifting off to a delicious warm choc chip muffin, and frankly so is ours, but we’re looking at something a little healthier. Muffins aren’t just for the sweet tooth, and there are some super delicious options for you to check out which will be the perfect cure for a rumbly tummy at recess. So next time you’re at the shops reaching for a zucchini, corn, bananas or nuts then just think what tasty muffin snack that they could be a part of for a snack this week.

 

Have a bar of it!

When it comes to buying muesli bars etc at the supermarket you can find yourself staring at the back of the packet trying to figure out how they could contain so much sugar. Well, there is another option but will take a little bit of prep, but the good thing is its delicious and the kids can help you out.

Making them at home will give the cups measures a work out and more seeds, nuts, and dried fruit than you can poke a wooden spoon at but we guarantee you they will be the best ones you’ve ever had. There are thousands of recipes out there, even non-bake versions, and its all about finding the one that’s right for you and your family. Plus, there is always the option of chucking in some sneaky chocolate chips or if you’re looking to give everyone a treat.
